Lakemaid Beer and Walleye
Lakemaid beer is known as the ‘fisherman’s lager’ but of course, any lighter beer will work in this recipe. You can make this a ‘fried’ walleye too by marinating the fish in the beer first, then coating it in breadcrumbs and baking it. Either way, be sure to drink whatever beer you don’t use. Hate to be wasteful.
Lakemaid Beer and Walleye
Ingredients
- Fresh walleye fillets de-boned, cut into even thickness pieces.
- Garlic whole cloves, sliced thinly.
- Butter 1T per piece of fish.
- Salt fresh ground pepper
- Brown sugar
- Lakemaid Beer
Instructions
- Preheat oven to 400 degrees.
- Scatter sliced onions on the bottom of a ceramic baking dish.
- Add sliced garlic, about 1/2 a large clove sliced per piece of fish.
- Salt and pepper both sides of fish.
- Place 1T of butter (sliced into two pads) under each piece of fish.
- Place fish on top of onions/garlic/butter.
- Cover top of fish generously with brown sugar and press firmly onto fish, about 2T per piece.
- Carefully pour Lakemaid into bottom of dish so it comes half way up the fish.
- Cover dish with foil and bake 15 minutes. Remove foil and bake 5 minutes more.
- Remove fish and top with onions and garlic from liquid.
