Salmon Pasta Salad with Avocado, Tomato and Tarragon Vinaigrette
Ingredients
2cupscooked salmonbroken into bite-sized pieces
1bell pepperthinly sliced
2green onionschopped
1avocadopeeled and sliced
2medium tomatoescut into wedges
4 - 5cupscooked and cooled pastawe used orzo
2/3cupfeta cheese
Dressing
1lemonjuice only
1/4cupwhite wine vinegar
3/4cupolive oil
pinchsugar
2garlic clovesminced
1teaspoonfresh tarragonminced
salt and pepper
Combine all ingredients in a jar with a tight-fitting lid and shake vigorously to blend dressing.
Instructions
In a large bowl, toss salmon with remaining ingredients, reserving some of the cheese for topping. Add dressing as needed to coat. Top with reserved cheese.
