Onion, Jalapeno and Cranberry Relish

Ingredients

Can be made several days in advance.

  • 3 tbls olive oil
  • 4 cups onion diced
  • 2 – 3 jalapeno peppers seeded and minced
  • 1/2 tsp salt
  • pinch black pepper
  • 1/2 cup dried cranberries
  • 1/3 cup light brown sugar
  • 1/4 cup balsamic vinegar
  • 1 cup red wine vinegar

Instructions

  • Heat oil in a large skillet over high heat. Add onions, jalapeno, salt and pepper. Cook until onions are light brown, stirring occasionally. Stir in remaining ingredients and simmer, uncovered, until liquid is evaporated, about 20 -25 minutes. Serve warm.
