Chipotle Tomato Salsa

Ingredients

olive oil

onion
chopped

garlic cloves
minced

brown sugar

fresh tomatoes
peeled and diced

canned chipotle chiles
minced (with 1 tablespoon adobo sauce)
1/2
teaspoon
dried oregano flakes

tablespoons
balsamic or red wine vinegar
salt to taste
Instructions
In a medium saucepan, heat oil over medium heat. Add onions, garlic and brown sugar and sauté for 3 – 4 minutes or until onions soften. Add remaining ingredients except salt and simmer for 10 minutes. Season with salt.
