I caught the very end of the spoonie vs scoter taste test. I MUST try Scott’s recipe because I can taste the difference between mallard and spoonie. The difference isn’t obvious in birds out of the rice, but spoonies from the SF Bay have been eating clams and other “muddy” stuff and it affects the taste.
Unless you brine, marinate and cover it up with sauce, I can tell the difference between and mallard and a spoonie as well. However, I’ve had beautiful-looking mallards that tasted bad and spoonies that tasted good. The spoonies we shot on that episode were from the Salton Sea…not exactly prime habitat…but they tasted fine. If your ducks are killed in less favorable places, they might take a little more work once you get them home. And I’m with on some of the SF Bay spoonies, and a few other ducks as well..they can be a little muddy.
