Jalapeno Cheese Hushpuppies
A different take on your standard hushpuppy. Be careful when deep-frying these guys. The corn kernels do occasionally pop when they’re cooking. It’s best to keep a splatter screen over the top if you aren’t using a fry daddy fryer.
Jalapeno Cheese Hushpuppies
Ingredients
- 1 1/4 cups self-rising corn meal
- 1 cup flour
- 3/4 cup fresh or frozen corn kernels see note above
- 3 tablespoons brown sugar
- 1 teaspoon salt
- 1 cup cheddar cheese grated
- dash or more Tabasco
- 1/3 cup yellow onion minced
- 2 jalapeño peppers seeded and minced
- 2 eggs beaten
- 1 1/4 cup buttermilk
- oil for frying
Instructions
- Mix first 5 ingredients in a large bowl. Combine remaining ingredients in another bowl and then mix with dry ingredients. Carefully (remember – hot oil can hurt you!) drop ping-pong ball-sized blobs of mix into 325 – 340 degree oil until golden brown. Drain on paper towels before serving.
