Jalapeno Cheese Hushpuppies

A different take on your standard hushpuppy. Be careful when deep-frying these guys. The corn kernels do occasionally pop when they’re cooking. It’s best to keep a splatter screen over the top if you aren’t using a fry daddy fryer.

Jalapeno Cheese Hushpuppies

Ingredients

  • 1 1/4 cups self-rising corn meal
  • 1 cup flour
  • 3/4 cup fresh or frozen corn kernels see note above
  • 3 tablespoons brown sugar
  • 1 teaspoon salt
  • 1 cup cheddar cheese grated
  • dash or more Tabasco
  • 1/3 cup yellow onion minced
  • 2 jalapeño peppers seeded and minced
  • 2 eggs beaten
  • 1 1/4 cup buttermilk
  • oil for frying

Instructions

  • Mix first 5 ingredients in a large bowl. Combine remaining ingredients in another bowl and then mix with dry ingredients. Carefully (remember – hot oil can hurt you!) drop ping-pong ball-sized blobs of mix into 325 – 340 degree oil until golden brown. Drain on paper towels before serving.
