Orange Barbecue Sauce
Give your game meats a different kick with barbecue sauce heightened with zesty orange flavor. I really enjoy it on a pig roast. The orange zest can overpower the other flavors if too much is added – so test, and test some more to get your version of ‘just right.’
Orange Barbecue Sauce
Servings: 2 cups
Ingredients
- 1/4 cup butter
- 1 cup onions diced
- 4 garlic cloves minced
- 1 jalapeno pepper sliced into thin rings
- 2/3 cup packed brown sugar
- zest from 1 lemon
- zest from 1 orange
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1 cup orange segments with juice
- 2 tablespoons orange juice concentrate
- 1 tablespoon fresh rosemary leaves minced (optional)
- salt and pepper to taste
Instructions
- In a medium saucepan, melt butter over medium heat. Add onions, garlic and jalapeno and cook for 3 – 4 minutes. Stir in brown sugar and cook for 3 minutes. Add lemon and orange zest, ketchup, Worcestershire, orange segments, orange juice concentrate and rosemary (if desired). Stir to blend. Reduce heat to low and simmer for 20 – 30 minutes, stirring often. Allow sauce to cool. Season with salt and pepper. If desired, process sauce with a food processor or blender until smooth.
