Ponzu Sauce
Let’s say you’re flipping through a cookbook and you come across a recipe for Ponzu Sauce. The name sounds cool, but the ingredients include “bonito flakes”. Making a quick mental inventory of your pantry, you’re confident that bonito flakes are out of stock, as if they were ever in-stock. So, you move on to another recipe. Hold your horses. Traditional Japanese Ponzu Sauce does indeed contain the fishy flakes, but you can do a simplified flake-free version of this sauce that is perfectly suited for any fish.
Ponzu Sauce
Ingredients
- Ponzu Sauce – 1 cup
- 3/4 cup orange juice
- 1/4 cup lemon juice
- 1/2 cup sake or dry white wine, but better with sake
- 1/4 cup sugar
- 1/4 cup soy sauce
- 1/4 teaspoon red pepper flakes
- 1 1/2 teaspoons cornstarch mixed with 2 teaspoons cold water
Instructions
- Bring all ingredients except cornstarch mixture to a boil in a saucepan for about 5 minutes. Stir in cornstarch mixture to thicken.
