Asian Slaw with Spicy Shrimp
Use whatever color of cabbage you’d like – the picture shows red. Or you can buy those bags of ready-made coleslaw if you are short on time. Just add the rest of the spices the recipes call for.
Asian Slaw with Spicy Shrimp
Ingredients
Asian Slaw
- 4 cups shredded cabbage
- 1/2 red bell pepper thinly sliced
- 1/2 orange yellow or green bell pepper, thinly sliced
- 4 green onions chopped
- 1 cup dry roasted peanuts
- 1 cup mayonnaise
- 1/2 cup rice vinegar or white wine vinegar
- 1 lime juice only
- 2 tablespoons sugar
- 1/2 teaspoon gingerroot peeled and minced
- 2 tablespoons soy sauce
- salt and pepper
Spicy Shrimp
- 1 pound large shrimp peeled and deveined
- 2 tablespoons blackening spice or your favorite Cajun spice
- 2 tablespoons olive oil
- 2 limes juice only
Instructions
Asian Slaw
- In a large bowl, combine cabbage with next 4 ingredients. In a medium bowl, combine mayonnaise with next 5 ingredients and whisk together until smooth. Season with salt and pepper. If dressing is too sweet for your taste, add more vinegar or lime juice. Too sour? Add more sugar. Add dressing to slaw and toss to coat evenly.
Spicy Shrimp
- Season shrimp with blackening or Cajun spice. Heat oil in a large skillet over medium-high heat. Add shrimp and cook quickly, about 1 – 2 minutes per side. Squeeze lime juice over shrimp and add to slaw.
