Southwestern Trout and Green Chile Grits
Unless you live in the Southeastern U.S., you may not get too worked up over a recipe that includes “grits”. Grits is coarsely ground corn. Or is it, grits are ground corn. Either way you say it, it’s pretty much the same as polenta, its Italian cousin. If you don’t want to go to the trouble of filleting your trout, cook it whole and remove the skeleton after it’s cooked. The recipe calls for Quick Grits. You can take your time and use the regular variety, as I’m not a big fan of Instant Grits.
