Citrus Marinated Striper/Striped Bass

So, I’m at the grocery store today and the checker asks, “So, when are you gonna come up with some new striper recipes?” Here’s one.

Keep in mind that you only want to marinate the fish for about 1 hour. Too much time in the marinade will turn your striper into ceviche or, given enough time…mush.

Do make sure that you remove any dark areas of meat, particularly the dark lateral “bloodline”, before cooking any fish.

 

Citrus Marinated Striper/Striped Bass

Ingredients

  • 1 1/2 - 2 pounds striped bass fillets
  • 1/3 cup orange juice concentrate
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh lime juice
  • 1/2 tsp ground coriander
  • pinch cumin
  • 1/4 cup olive oil
  • 1 jalapeno pepper seeded and cut into very thin strips
  • 1 red onion thinly sliced
  • 2 garlic cloves minced
  • 2 tablespoons butter chilled

Instructions

  • Whisk together orange juice and next four ingredients. While whisking, add olive oil in a thin stream. Place fish in a glass or plastic container, top with jalapeno, onion and garlic and pour marinade over. Cover and refrigerate for 1 hour, turning once after 30 minutes. Remove fish and reserve marinade. Heat a large skillet over medium heat, add fish and brown on one side. Flip fish over, add marinade, onions, peppers and garlic and cook for 3 - 4 minutes. Remove fish when done and whisk in butter until melted. Spoon sauce over fish.
