When making the Coffee Rubbed Goose or Coffee Rubbed Venison, you can add that finishing touch to the dishes with this compound butter. It will give an extra smokey coffee taste.
Coffee Compound Butter
- 2 cups coffee day old coffee is fine
- 1 stick butter softened
- 2 tblsp sugar
- 1 clove garlic diced
Take your coffee and reduce it to about 1/4 cup of liquid, until it is almost syrupy. Allow to cool
Mix with your softenend butter and add the sugar and garlic
Place butter onto a large strip of plastic wrap and roll into a log. Tie each end off and place in refrigerator. Once hardened, add to any existing wild game dish when finishing the dish to give it that extra "coffee" flavor.
