Corn and Mango Relish

My favorite recipe of summer 2011, this one combines a few of my favorite flavors and textures.  Pan-seared fresh sweet corn, just-ripe mango, red onion, peppers, cilantro and lime – great as a side dish or served atop grilled fish.

Corn and Mango Relish

Ingredients

  • 4 ears sweet corn
  • 1/2 cup Vidalia onion finely diced
  • 1 jalapeno pepper seeded and minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon sugar
  • 1/2 red bell pepper seeded and finely diced
  • 1 cup mango peeled, seeded and diced
  • 1 clove garlic minced
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 cup fresh cilantro chopped
  • salt and pepper to taste

Instructions

  • Remove corn from cob. Heat olive oil in a large skillet over medium-high heat. Add corn, jalapeno pepper sugar and cook for 5 – 6 minutes or until corn is lightly browned. Allow corn mixture to cool. In a medium bowl, combine remaining ingredients with cooled corn. Season to taste with salt and pepper.
