Fish, Chorizo, White Beans

You can use any type of white bean – white kidney, navy, etc., whatever’s available. This recipe calls for canned white beans, but you can make it even better by simmering dried beans in chicken broth, onion, garlic and some cooked chorizo.

 

Fish, Chorizo, White Beans

Ingredients

  • 1 1/2 cups chorizo sausage diced
  • 1 cup yellow onion finely diced
  • 1 cup carrot peeled and finely diced
  • 1 cup celery finely diced
  • 2 garlic cloves minced
  • 1 1/2 cups cooked white beans if canned, drain and rinse
  • 1 cup diced tomato canned or fresh
  • 4 6 - 8 ounce fish fillets
  • 2 tbl olive oil
  • 1/2 cup dry white wine
  • 2 tbl lemon juice
  • salt and pepper
  • fresh parsley minced
  • 1 lemon quartered

Instructions

  • Brown chorizo in a large skillet over medium heat. Add onion, carrot and celery and saute until onions are translucent. Add garlic, white beans and tomato and heat to warm.
  • To prepare fish, heat oil in another large skillet over medium heat. Season fish with salt and pepper and lightly brown on one side. Flip fish over, increase heat to high and add white wine and lemon juice. Cook until fish is just done.
  • To serve, mound white bean mixture on plates, top with fish and parsley. Garnish with lemon wedges.
