Fried Whole Fish

I prepared this recipe on HuntFishCook with a beautiful little Florida Pompano, but you can do it with any fish that will fit into a pan of hot oil.

Fried Whole Fish

Ingredients

  • 1 whole fish – gutted thoroughly rinsed and gills removed
  • kosher salt and pepper
  • sliced lemons and limes
  • onion slices
  • lots of fresh herbs – rosemary oregano, thyme, basil, etc
  • butcher string
  • oil for frying

Instructions

  • Rub fish inside and out with salt and pepper. Place lemon, lime, onion and herbs into cavity. Secure with butcher string. Place in hot (360 degree) oil and fry for roughly 10 minutes per inch of thickness or until skin is crispy on each side. Remove from oil and drain on paper towels. Season again with salt and pepper while fish is still hot. Serve fish on a platter and allow guests to “pick”.
