Grilled Cheese & Spicy Shrimp on Sourdough Bread
Best when dunked into a bowl of Bacony Tomato Bisque

Equipment
- skillet or griddle
Ingredients
- 4 6-inch sections of sourdough loaf, sliced lengthwise
- 6 tbsp softened butter
- 1 1/2 cups shaved Parmesan cheese (or any cheese will work)
- fresh basil leaves
- 16 large shrimp grilled and seasoned with your favorite hot sauce
Instructions
- Spread butter evenly on the inside parts of the sourdough bread. Toast, butter side down, on a flat top griddle or butter side up under a broiler until lightly browned.
- Place bread, toasted side up, on a work surface. Arrange half of the shaved cheese on 4 pieces. Place basil leaves on cheese and top with 4 shrimp. Place remaining cheese on shrimp and place other toasted bread half on top, pressing down firmly.
- Place sandwiches on a medium hot griddle or in a large skillet. Press sandwich into the hot pan to expedite the cheese melting part. Once it is lightly browned and the cheese is melted, cut sandwich in half and serve.
