Fish in Foil
A very forgiving way to cook any type of fish, but I prefer moist, flaky fish. The concept is simple – put a hunk of fish and some vegetables on a piece of foil. Wrap it up and cook it. The foil seals in flavors and aromas, as you’ll soon find out when you carefully open the foil after cooking

Fish in Foil
Ingredients
- 1 pound skinless fish fillets pieces are O.K.
- *** salt and freshly ground pepper
- 1/2 sweet onion Vidalia, Walla Walla, Maui sliced into rings
- 2 - 4 garlic cloves smashed
- 1/4 cup fresh herbs whatever is available
- 1 orange sliced
- 1/4 cup dry white wine
- 2 tablespoons butter
- 2 pieces heavy-duty foil
Instructions
- Place each piece of foil on a flat surface and bring up edges to form a “bowl”. For each serving, season fish with salt and pepper and place in foil. Top with remaining ingredients. Seal foil at the top so that liquid will not escape. Place in a preheated 400 degree oven or in medium-hot barbecue for 15 – 17 minutes. Serve in foil.
