Mango Wasabi Sweet and Sour Sauce

Great sauce over any fish and wild game. Check out my “Spicy Sweet & Sour Duck” recipe here. Sweet and sour dishes don’t have to be deep-fried to enjoy. Just roast/bake in the oven or sauté in a pan, pour this over the fish/meat and serve with rice.

 

Mango Wasabi Sweet and Sour Sauce

Servings: 1 1/2 cups sauce

Ingredients

  • 2/3 cup rice vinegar
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons apricot preserves
  • 2 cloves garlic minced
  • 1/2 teaspoon sesame oil
  • 2 teaspoons pickled ginger minced
  • 2 green onions chopped
  • 2 limes juice only
  • 1 - 2 tablespoons prepared wasabi you can always add more
  • 1 - 2 tablespoons cornstarch mixed with equal part cold water
  • 1 mango; peeled seeded and diced

Instructions

  • Combine first 6 ingredients in a sauce pan over medium heat and bring to a boil. Reduce heat to low and simmer for 2 – 3 minutes. Stir in green onions, wasabi and simmer until wasabi is incorporated into the sauce. Increase heat to medium and stir in cornstarch, a little at a time, until sauce is thickened, but not pasty. Remove from heat and stir in mango. Adjust flavors to suit you taste. Too sweet? Add more vinegar. Too sour? More sugar. Not enough wasabi? You know what to do.
