Red Eye Gravy (coffee breakfast gravy)

Red eye gravy isn’t an exact recipe. Just start with some of the pan drippings from whatever happened to be in the pan after you cooked your game sausage, or other meats, add some dark brown sugar, strong brewed coffee and reduce the liquid to thicken, adding extra coffee to the pan if you want it stronger tasting.

For steaks and chops, leave out the brown sugar and instead add garlic, onions and/or japaleno peppers. After the liquid has reduced to a few tablespoons, remove the pan from the heat and whisk in some chilled butter for a sauce to serve with your steaks.

Red Eye Gravy (coffee)

Ingredients

  • pan drippings from sausages steaks or chops
  • 1 tbsp brown sugar
  • 2 cups coffee

Instructions

  • Add a tablespoon or so of the brown sugar to the pan, 2 cups of coffee and crank up the heat. Reduce the liquid to just a few tablespoons, adding additional coffee to the pan if you like it strong tasting. If desired, you can mellow out the gravy with a few tablespoons of chilled butter, whisked in off the heat until melted. Spoon sauce over cooked meat.
