South Carolina Barbecue Sauce

In parts of the Carolinas, barbecue sauce is yellow, not red, a byproduct of the region’s German heritage. You might think it is odd to serve a yellow sauce with your pulled pork. Until you bite down. The flavor profile is similar to conventional red barbecue sauce, sweet tart, but the base flavor is mustard, not ketchup, and the sweetness is cane sugar, not molasses.

 

South Carolina Barbecue Sauce

Servings: 1 1/2 cups

Ingredients

  • 1/3 cup apple cider vinegar
  • 1/2 cup yellow mustard prepared
  • 1/2 cup brown sugar
  • 2 tablespoons water
  • 1 tablespoon chili powder
  • 1/2 teaspoon black pepper
  • Dash Tabasco sauce
  • 1/2 teaspoon soy sauce
  • 1 tablespoon butter

Instructions

  • In a medium saucepan, combine the vinegar, mustard, sugar, water, chili powder, pepper, and Tabasco. Simmer for 25 minutes. Whisk in soy sauce and butter.
