Basic Duck Marinade

Combine all ingredients in a container with a tight fitting lid. Shake well and pour over game. Cover and refrigerate for 6 to 24 hours, turning occasionally. Before cooking, let game drain and pat dry with paper towels.

Basic Duck Marinade

Servings: 1 Quart

Ingredients

  • 2 cups dry red wine
  • 1/2 cup soy sauce
  • 1/4 cup balsamic or red wine vinegar
  • 1/4 cup vegetable oil
  • 1 medium onion diced
  • 6 garlic cloves minced
  • 1 tablespoon cracked black pepper

    Where the hell is the recipe for this fantastic, best-in-class looking roast/mahogany/Peking-style duck?!?!?! I went backk through all the older posts and can’t find it anywhere on this site.

      Hi Bill I use it to marinade the duck. I used it and marinade my duck for 2 days. It came out delicious. It was the hit of my Xmas dinner. Everyone was talking about how delicious it was. I well use this marinade recipe everytime I fix a duck.

    I see you don’t add extra salt?

      The soy sauce provides enough salt for me, but you can always add more.
